When we got married, this was one of the top 3 recipes my new husband insisted I know and learn. It was always one of his favorites growing up, and I would describe it as pure and simple comfort food. It's so easy and reliable. It's kind of that "all-in-one" dish that you only need to throw together a salad or put out some veggies alongside and you're done!
It's called Tater-Tot Hot Dish (named by the Minnesotans who use the term "Hot Dish" to describe all things the rest of us call "Casserole").
Here's how to make it:
Gather the following ingredients:
1 lb ground beef
1 medium onion chopped or 1 T onion flakes (real onion is better)
I can cream of celery soup
1 cup milk
1 ½ cups shredded cheddar cheese
1 bag Tater Tots
Preheat oven to 325. Brown ground beef and onion, draining any fat.
Add cream of celery soup, milk, and salt and pepper to taste.
Pour mixture into 9x13 pan. Top with shredded cheddar cheese.
Bake at 325 for one hour.
Cut into generous squares and enjoy.
Variations/Serving Ideas:
Jesse loves his with BBQ sauce.
Add a can of corn. (I would add it between meat mixture and cheese layer)
I love to serve this with a great salad to cancel out the unhealthiness factor of the main meal. We all know that eating a salad with anything cancels out any badness of that food, right?
I do hope you enjoy!
