Oh my goodness gracious. I shouldn't even have to tell you how heavenly these brownies are, because the picture is worth a thousand words. Especially if you are a chocoholic like me. They take a little more effort than your average brownie, but the end result is SO impressive (visually and taste-wise), that you will be glad you took the time to do it.
There are three components to these babies. The brownie bottom, the mint center, and the chocolate (kind of ganache) topping.
Brownies:
1/2 c butter
1 pkg chocolate chips
1 1/4 c sugar
1 t vanilla
1 1/4 c flour
1/2 t baking powder
1/2 t salt
3 eggs
Heat oven to 350, grease 9x13 metal pan. Heat butter and 1 c chocolate chips until melted. Stir in sugar, vanilla, and eggs. Add flour, salt, and baking powder and stir in the rest of the bag of chocolate chips.
Spread in pan and bake 30 minutes or until center is set.
Mint Creme Center:
2 c powdered sugar
1/2 c butter, softened
2 T creme de menthe (green: purchase at the liquor store)
Beat together until smooth. Spread over cooled brownies. Chill until cool.
Chocolate topping:
6 T butter
1 c chocolate chips
Melt over low heat, cool slightly and spread on top of mint creme.
Chill in refrigerator until topping is fully firm.
Chill in refrigerator until topping is fully firm.
Keep in refrigerator and take out 1/2 hour before serving. (an important step unless you want a mess on your hands!)
