If you are looking for a tasty side to serve with your chicken this week, try this! Potatoes made even better. Not the healthiest thing out there, but eat a responsible amount and you'll be just fine!
To make our "Loaded Cubed Potatoes", here's what you will do:
1) Boil approximately 6 cubed red potatoes (you can use any kind)
2) Drain, place in an 8x8 glass baking dish.
3) Add approximately 6 pats of butter and allow to melt
4) Add salt and pepper, chopped bacon, shredded cheddar cheese and chopped green onion.
5) Bake at 400 for 20 minutes
By the way, I used to hate making bacon. I felt like the whole house got smoked out and there was always tons of splattered grease all over my stove afterwards.
Then a friend told me how smart people cook their bacon!
Smart people lay their bacon on a rack over tin foil on a baking sheet, then cook at 400 for 20 minutes.
It comes out so much better than pan frying. No burning, no grease everywhere, and easy cleanup!
When you make this dish, you'll cook the bacon first and then you'll keep the oven on right after you chop that bacon up and cook the whole thing together.
*Optional extras: Sour cream, fresh chives (would be substituted for green onion), anything you think sounds good.
