Mexican Lasagna

Do you know about this recipe?

I'm sure many of you have heard of it.  But just in case you haven't, here is something you will love to eat and make again and again for the fam.  It's a winner!

Mexican Lasagna

Here are the ingredients you will need:
Sriracha is optional as you will see in recipe below
Ingredients:
1 lb ground turkey (or chicken or beef; I like turkey because it absorbs so much of the flavor the seasonings give it)
1 medium onion, diced
1 T chili powder
1 t cumin
salt and pepper to taste
1 can fire roasted diced tomatoes
1 can black beans (drained and rinsed)
1 can corn (drained)
Red pepper flakes and Sriracha to taste


Directions:
Saute 1 lb of ground turkey (or chicken, or even beef) in a bit of oil (no oil if using beef).  Brown several minutes.
Add chopped onion and saute several minutes more, until onion is tender
Add chili powder, cumin, salt and pepper to taste and mix through.
Add extra heat at this time by using a pinch of red pepper flakes and/or a drizzle of Sriracha.  Stir.
Add 3 cans - tomatoes, corn, and beans.

Stir all together.
Layer in 9x13 casserole.  Start with corn tortillas, then meat mixture that you just created, then shredded cheddar cheese.  Repeat.
Here's what you have:
Ready to bake
Tip: cut corn tortillas in half to fit more easily into baking dish.
 Bake at 425 degrees for 17 minutes.  Out comes the gooey and so flavorful Mexican Lasagna.


Oh so yummy.  A hit with the kids too!

**I first heard about this recipe on Rachael Ray' 30 minute meals, but many people have their own versions of it out there.  This one is my adaptation of the RR one.  :)
